Instructions:
Step 1: Make the Batter
In a large bowl, mix together the chicken, cheddar, onion, garlic, and herbs. Season with salt, pepper, and paprika. In a separate bowl, whisk together eggs, milk, and flour until smooth. Pour the wet mixture over the chicken and stir until everything is coated and sticks together.
Step 2: Heat the Skillet
Pour about 1/4 inch of oil into a large skillet and heat over medium heat (around 350°F). Test the oil by dropping a small bit of batter in—it should sizzle without turning dark brown immediately.
Step 3: Fry the Fritters
Scoop 1/4-cup portions of batter into the hot oil, flattening slightly with the back of a spoon. Fry 3–4 minutes per side until deep golden brown.
Step 4: Drain & Keep Crispy
Work in batches to avoid overcrowding the pan. Transfer finished fritters to a wire rack or paper towels to drain. If making a large batch, keep them warm on a rack in a 200°F oven.
Step 5: Serve & Enjoy
Serve hot while the cheese is melty. Add a squeeze of lemon or your favorite dipping sauce, like honey mustard or ranch.
