Thai Chili Chicken Lettuce Wraps
1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes until fragrant.
2. Add the ground chicken to the skillet. Cook until browned, breaking it apart with a spatula as it cooks.
3. Stir in the shredded carrots and diced bell peppers. Cook for an additional 3 to 4 minutes until the vegetables soften slightly.
4. In a small bowl, whisk together the soy sauce, fish sauce, lime juice, and brown sugar. Pour this mixture over the chicken and vegetables in the skillet, stirring well to combine. Cook for another 2 to 3 minutes.
5. To assemble, spoon the chicken mixture into the lettuce leaves. Drizzle with Thai chili sauce and garnish with fresh herbs. Enjoy!
