Cheesecake Bars
For the Graham Cracker Crust:
- 2 cups graham cracker crumbs (about 14 full sheets)
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- Pinch of salt
For the Cheesecake Filling:
- 24 ounces (three 8-ounce packages) full-fat cream cheese, softened to room temperature
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 teaspoons pure vanilla extract
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
For the Cranberry Swirl:
- 1 (14-ounce) can Ocean Spray Whole Berry Cranberry Sauce
- 2 tablespoons cornstarch
- Optional: 1 teaspoon orange zest for extra brightness
Optional Topping:
- Whipped cream
- Sugared cranberries
- Extra cranberry sauce dollops
This yields about 16-20 bars in a 9×13-inch pan, perfect for a crowd.
