1. Pat the chicken dry with a paper towel and season with Creole kick seasoning, onion powder, garlic powder, poultry seasoning, and Italian seasoning.
2. In a large pot, heat vegetable oil over medium-high heat and brown the chicken on each side for about 3 minutes.
3. Remove the chicken from the pot and set aside.
4. Lower the heat and add butter, followed by diced onion, bell pepper, celery, and minced garlic. Sauté until softened.
5. Sprinkle flour over the vegetables and stir to combine, cooking for about 1 minute.
6. Gradually add chicken broth while stirring to avoid lumps, scraping the bottom of the pot. Bring to a simmer.
7. Add the browned chicken back to the pot, cover, and simmer for about an hour until the chicken is tender.
8. If using, add chopped potatoes halfway through simmering and cook until fork-tender.
9. Adjust seasoning if needed and serve the stewed chicken and gravy over cooked white rice.
